Simple Lamb Koftas
Easy to maker meal with a delicious aroma of fresh herbs, fruits and a touch of spice! Enough to feed four people 3 kebabs each.
Into a large bowl put
400gms of fresh minced lean lamb grated zest of 1 orange grated zest of 1 lemon ½ teaspoon on ground cumin good handful of finely chopped fresh mint leaves good handful of finely chopped fresh coriander leaves 1 teaspoon of harissa paste or substitute chilli powder or paprika or hot chilli sauce or enough to taste.
Finish with a good grind of black pepper and stir well to incorporate all the herbs, zest and spices.
Roll into small sausages and then slice onto wooden skewers (pre soak to stop drying out when cooking). Cover the base of a frying pan with olive oil and shallow fry in batches only takes a couple of minutes or so per batch turning half way through
Serve with a yoghurt sauce from 200ml of Greek yoghurt, squeeze of lemon juice, tablespoon of chopped mint and some more harissa or spice to warm it up
