Cinnamon Plum Cake

A simple cake with fresh plums, ideal as dessert or afternoon teacake!

Beat well together:
250gms of softened butter with
1 cup of caster sugar and
1 teaspoon of vanilla essence until light and fluffy
and then add, one at a time, still beating 2 large free-range eggs.
Into this mixture sieve 2 ½ cups of plain flour and
2 teaspoons of baking powder and then incorporate well.

Using a 22cm spring form tin, lined with baking paper, spoon 2/3rd  of the mixture onto the bottom..
Arrange on top of the mixture 500gms of ripe plums, stoned and halved.

To the remaining cake batter mixture, add:
1 cup of desiccated coconut
2 teaspoons of ground cinnamon
½ cup of flour fork through to make a crumble topping which should then be sprinkled on top of the plums.
Bake in 180 c oven for approximately 1 hour
