His uncompromising commitment to producing only the finest quality, unprocessed, unblended gourmet honey has captured honey connoisseurs Australia-wide, with overseas markets rapidly discovering the delicious unique flavours of Australia, Honey is sourced from the towering giant karri trees, found only in a small belt extending from Margaret River to Albany, to the round-leaved moort, found in isolated panoramic coastal pockets, west of Albany. The Waggle Dance Honey Company hand-harvest the many unique floral honeys, representing some of the rarest and finest flavours found anywhere in the world. Using traditional methods of extracting honey from the cone, Waggle Dance Honey is harvested under strict guidelines of minimal handling. The honey is uniquely cold-pressed at ambient air temperature, around 13ºC, into holding tanks and brought to hive temperature over three days, unheated and unblended. |
