You will need for 4 people as a side dish:
500gms of peeled and sliced sweet potato, par boiled for 2 minutes1 Cob of Sweet Corn, husk and remove kernels1 medium Red Onion, peeled and thinly sliced1 to 2 tablespoons of warmed honey1 to 2 tablespoons of Extra Virgin Olive Oil
Pre heat oven to 180º c
In an ovenware dish layer the par boiled sweet potato with the thin onion rings.
Scatter the sweet corn kernels over.Pour the honey evenly over the vegetables.
Finish with the extra Virgin Olive Oil
Bake in oven for about 30/40 minutes until sweet potato is cooked and starting to crisp.
