Enough to feed four people 3 kebabs each.
400gms of fresh minced lean lambgrated zest of 1 orangegrated zest of 1 lemon½ teaspoon on ground cumingood handful of finely chopped fresh mint leavesgood handful of finely chopped fresh coriander leaves1 teaspoon of harissa paste or substitute chilli powderor paprika or hot chilli sauce or enough to taste.
Finish with a good grind of black pepper and stir well to incorporate all the herbs, zest and spices.
Roll into small sausages and then slice onto wooden skewers (pre soak to stop drying out when cooking). Cover the base of a frying pan with olive oil and shallow fry in batches only takes a couple of minutes or so per batch turning half way through
Serve with a yoghurt sauce from200ml of Greek yoghurt,squeeze of lemon juice,tablespoon of chopped mintand some more harissa or spice to warm it up
