Pork Sausage, Apple, Bacon, Leek Pilaf
An all in one dish, easy to prepare beforehand and then just popped
in the oven to cook when needed.
A real winter warmer!
Enough for 4 people; can all be made in one pot, an ovenproof casserole with a lid.
All it takes is a few sausages, bacon, a braeburn Apple,a leek, long grain rice
fresh herbs and 500mls of stock
4 pork sausages and 3 rashers of bacon, both cut into pieces,
about 2 cms, lightly sealed and browned in an ovenproof casserole
with a touch of oil.
Remove from pan add a good sized knob of butter and when melted
add 1 chopped and well washed Leek.
Cook on a moderate heat to sweat and soften the leek.
Then add 1 cup or more of long grain rice to the leek and continue cooking
until the rice goes transparent.
This will need attention with frequent stirring but should only take a minute or two.
Return the sausage and bacon to the pan and stirring
finally add 500mls of stock, chicken or vegetable, continue to stir and bring to simmer.
Turn off heat and add 1 Braeburn Apple, cored and chopped large,
a good grind of pepper, and plenty of chopped fresh herds.
One final stir, pop the lid on and its ready for the oven.
In an oven preheated to 170c this will take about 30 minutes.
If the oven is too hot the rice will absorb the stock quickly
and may need more liquid.
Serve straight from the casserole. A stir with a fork, the rice should be moist,
and final sprinkles of fresh herbs and you have a meal all in one pot!
