Two Potato Shake
Now that Sweet Potatoes and New Potatoes are available
this is an easy to prepare these vegetables in a different style.
This should suffice for 4 people as an accompaniment to a main meal.
You will need to prepare
Baby potatoes, scrub well about 250/300gms
(if potatoes are too large just dice them into large chunks).
Sweet Potato, also scrub well about 250/300gms of and dice into large chunks
6 whole small onions, peeled - again cut in halves or quarters if large. 6 garlic cloves, peeled and slightly crushed 6 Spring Onions, cleaned and each cut into three. 2 or 3 Bay leaves Sprigs of Fresh Thyme. Freshly Ground Pepper
Heat up in a large frypan, (big enough to take all the above vegetables), 2/3 tablespoons of extra virgin olive oil.
Toss in all the vegetables, garlic onions etc , toss well in the oil,
turn the heat down to the lowest possible, cover, and cook for
about 35/40 Minutes.
Check every so often and toss them or shake them in the pan.
Do not overcook; they need to be crisp and golden.
