Rhubarb and Apple Pudding


I believe Rhubarb is greatly underrated. 

 
Here, with Apple it makes a great old-fashioned comfort food for any occasion. 
Furthermore, it's really easy!


You will need:
6 stems of rhubarb washed and chopped (3cms slices) about 400gms
6 small apples, cored, peeled and diced (about 600gms unpeeled weight)
1 Orange, Zest and juice
½ Cup of Caster Sugar

For the Topping:
¼ cup of Caster Sugar
1 cup of self raising flour
½ Cup of Traditional Milk
½ Cup of Whipping Cream


Or for more of a "grunt" use 1 cup of Cream and no milk
This will give the topping a rougher, scone like finish!

Method:

Combine all the fruits and sugar in an oven to table dish and bake in a 180c oven for about 30 minutes.
Remove from oven, stir the mixture.
Spoon, spread the topping mixture all over
Return to oven for about 30 minutes until golden.
Serve with Ravenhill Cream.
