LAMB - ALL IN ONE SLOW COOKED
This is an easy to prepare ahead dish for Lamb Forequarter chops that will take care of itself and present ready to serve oven to table. Adjust the amounts to suit the number you are cooking for but for four people I would use 4 good-sized lamb forequarter chops.
You will need 2 or 3 onions peeled and cut into wedges. Whole bulb of Garlic, broken up into cloves Fresh Rosemary -bruised Fresh Mint- bruised 1 tablespoon Balsamic Vinegar Black Pepper
Potato and Pumpkin, thinly sliced Extra Virgin Olive Oil
Method
Place the chops in an oven to table dish Top with the onion wedges, garlic and herbs, scattered around and on top Sprinkle Balsamic Vinegar over together with black pepper Arrange potato and pumpkin in overlapping layers on top. Sprinkle with Olive oil and Sea salt Bake in a low oven, 150c for 1 1/2 hours until top is baked through and golden. Turn heat up for last few minutes to crisp if you wish.
